Balsamic Syrup
Serves 4
 
 

This sweet and tangy syrup is a perfect accompaniment for grilled vegetables (radicchio, cauliflower, squash) or for grilled chicken or fish.

1/4 cup packed brown sugar
1/2 cup water
1/2 cup balsamic vinegar
1 teaspoon salt

In a small saucepan over medium heat on a camp stove, cook the sugar, without stirring, until melted (be careful to not let it burn). Carefully add water, vinegar, and salt. Don’t be concerned if the sugar hardens when you add the liquid. As the liquid heats up, the sugar will melt again and dissolve. Bring to a boil and continue to cook, stirring occasionally, until the mixture is reduced to a syrupy consistency, about 15 to 20 minutes.
